Steamed fish with lime and chili is a whole fish in a sour herb dressing, ordered only after you hear the kilo price. Jae Eiw, by the Klong Prao estuary, has been that seafood room for years.

What it tastes like
- Lime, garlic, and chili over a whole fish. The sauce should be sour, not sweet.
How to order it
- Thai name: pla nueng manao (ปลานึ่งมะนาว).
- Say: Khor pla nueng manao, kilo la thao rai, khrap/kha.
- Point at the fish and hear the baht number.
