Thai food: street stalls, Bib Gourmand, Lanna, and the south
Thai food is known for regional cooking, not one national plate. Eat Bangkok by rail. Eat Chiang Mai at lunch. Eat Phuket Town in a heritage house, not on a beach grill.

The Michelin Guide Thailand 2026 lists 137 Bib Gourmand rooms nationwide, including 44 in Bangkok and the surrounding provinces, 18 in Chiang Mai, and 19 in Phuket. Bib is the value badge, not a star. Jay Fai on Maha Chai is the one-star exception that still cooks like a street wok.
Use the cluster pages. Do not stack a Jay Fai queue, a Chatuchak Saturday, and a Ratchada night market on the same calendar day. One serious meal and one market is enough.

Common questions
- Is a Michelin star the same as Bib Gourmand?
- No. A star is a destination kitchen. Bib Gourmand is the inspector badge for good cooking at a fair price. Most of the useful Bangkok and Chiang Mai lunches are Bib or Selected, not starred.
- Do you need reservations?
- Almost never for street stalls and shophouses. Jay Fai is walk-in only, Wednesday to Saturday. A few sit-down rooms such as The Charm Dining Gallery take a phone booking. Queue early or accept a wait.
